Chocolate Shortbread Cookies

300 degrees Fahrenheit

  • 3 ounces melted semi-sweet or dark chocolate (I highly recommend Scharffen Berger or Valrhona)

  • 3/4 cup powdered sugar

  • 1 cup butter

  • 1 teaspoon vanilla

  • 2 cups flour


Preheat the oven to 300 degrees.

With an electric mixer, beat the butter and sugar together until the mixture it is light and fluffy. Add the vanilla and melted chocolate gradually while continuing to beat the batter. Gently fold in the flour and stir until it is well blended.

Spread the batter into a well-greased 13 x 9 baking pan. Bake for 40 to 45 minutes, until the center is firm.

Once it is partially cool, cut into bars. You can sprinkle them with powdered sugar or a blend of powdered sugar and cocoa powder.
