Chocolate Dip Cookies
A tender and flaky oatmeal shortbread cookie, dipped in chocolate...
4 cups flour
1 tsp. salt
2 cups shortening
1 cup powdered sugar
4 tsp. vanilla
2 cups quick oats
24 oz. semisweet chocolate chips
½ cup milk
Cream together the shortening, powdered sugar and vanilla until they are well blended.
Add the flour and salt to the mixture and blend thoroughly. Add the oats
and continue to blend. Roll the dough with your fingers into walnut sized balls and
place on a cookie sheet to bake. Bake them for 25-30 minutes, until
they are slightly golden, at 325 degrees.
To make the topping, melt the
chocolate (in a double boiler or heat-proof bowl in the
microwave), and stir in the milk until it is creamy smooth.
When cookies are completely cool, dip in chocolate mixture. You
may then dip them (right away, while the chocolate is wet) in
chopped nuts or chocolate sprinkles.
